Hey everyone! The weather has gotten chilly lately, hasn't it? ☁️ In weather like this, I strangely keep craving food that is both spicy and smooth. I have my own personal comfort food that I always make on weekends resting at home after retiring, or on days filled with work stress: it's Gochujang Cream Tteokbokki!

I used to order it often via delivery apps, but lately, delivery fees are so expensive... And more than anything, it's hard to find a place that 100% satisfies that specific thick, creamy texture ("kkudeok-ham") I crave. So, I researched and made it myself, and oh my gosh! It tastes way better than buying it. When friends came over, I made it once and they all went crazy asking for the recipe. Today, I'm sharing that menu freely on the blog. 😋

The charm of this dish lies in the harmonious dance in your mouth between the spiciness of Gochujang (Korean chili paste) and the richness of the cream. Just when it might feel too rich, the Gochujang catches it, and just when it might feel too spicy, the cream softly wraps around it, so you can't stop eating. Even cooking beginners can follow along as easily as making ramen, so don't worry and follow me! ✨

🛒 Ingredients Preparation (Based on 2 servings)

The ingredients make for a perfect "fridge clearing" meal. However, focusing on just a few key ingredient points will change the dimension of the taste!

[Essential Ingredients] Tteokbokki rice cakes 300g (Wheat cakes or rice cakes, your choice! I recommend chewier wheat cakes) Heavy cream 250ml (Animal-based heavy cream with higher milk fat content tastes much better than whipped cream topping) Milk 150ml Gochujang (Korean chili paste) 1.5 tbsp (Plenty!) Gochugaru (Korean chili flakes) 1 tbsp (Fine powder recommended for color) Bacon 4~5 strips (Or sausage/ham) Onion 1/2 Minced garlic 1 tbsp Sugar 1~1.5 tbsp (Adjust to your taste)
[Optional Ingredients - Tastes even better if added!] Eomuk (Fish cake) 1~2 sheets Broccoli or button mushrooms Cheddar cheese 1 slice Parsley flakes & a little black pepper

💡 Ingredient Prep Tip! If your rice cakes are hard, soak them in lukewarm water for about 10 minutes before starting cooking. This way, the sauce absorbs way better inside. Also, adding cocktail shrimp instead of bacon gives it a very luxurious taste!

👩‍🍳 Cooking Process: Luxurious Home Cooking in 6 Steps

Step 1. Soaking rice cakes and prepping vegetables

First, soak the rice cakes in water. Slice the onions thinly and cut the bacon into bite-sized pieces. You can use minced garlic, but slicing whole garlic cloves thinly brings out the flavor much better and looks prettier too!

Step 2. Sautéing garlic, onion, and bacon

Lightly coat a pan with cooking oil and sauté the minced garlic (or sliced garlic) first to bring out the aroma. When the garlic scent rises, add the onions and bacon and stir-fry until golden brown. The bacon fat needs to render out sufficiently here to make the sauce much nuttier and richer.

Step 3. Pouring in milk and heavy cream

Once the bacon is cooked crisply, pour in 150ml of milk and 250ml of heavy cream. Keep the heat on medium and wait until the edges start to bubble. Since heavy cream is included, be careful as it can boil over if the heat is too high!

Step 4. Adding the magic seasoning

Now add 1.5 tbsp of Gochujang, 1 tbsp of Gochugaru, and 1 tbsp of sugar. The key point is to dissolve it well so it doesn't clump! The sauce will turn an orange (rosé color) hue and a delicious aroma will rise up. Taste it and adjust the sweetness with sugar or salty taste with half a tablespoon of soy sauce if needed.

Step 5. Adding rice cakes and simmering

When the sauce starts to boil, add the presoaked rice cakes and fish cakes. From now on, it's time to gently simmer it between low and medium heat until the sauce becomes thick and creamy. Don't forget to stir occasionally so the rice cakes don't stick to the bottom!

Step 6. Finishing touch with cheese and pepper

Once the rice cakes become soft and chewy and the sauce reaches your desired consistency, place a slice of cheddar cheese on top to melt. The flavor increases by 200% when cheese is added! Finally, sprinkle some black pepper to finish it off. 🧀

💬 Honest Review & Storage Method

I made it myself, but seriously... this tastes good enough to sell! The stuffiness of Gochujang disappears, leaving only the richness of the cream, so it's a taste that children really love too. If by chance you have leftovers, store them in a container in the refrigerator. When eating it the next day, add 2~3 more spoons of milk and microwave it, and you can feel that initial creamy thickness again.
