The weather has gotten quite chilly lately, hasn't it? When the cold wind blows, I find myself craving something spicy, yet simultaneously yearning for that smooth, savory creaminess. Since I had friends coming over yesterday, I wondered what to serve and decided to make Rose Dakgalbiโadding a silky rose sauce to the classic spicy stir-fried chicken everyone loves.
The result was a massive success! As soon as my friends took a bite, they said, "This is better than the ones at restaurants!" and scraped every last drop of sauce. Rose dishes can be surprisingly expensive when ordering delivery, so Iโm going to share the secret to making it richer and more flavorful than any restaurant right in your own kitchen. Letโs elevate your home-cooked meal with some Rose Dakgalbi!

๐ Ingredient Prep (Serves 2)
Great cooking starts with great ingredients! For the chicken, I highly recommend tender chicken thighs over the drier breast meat.
- Essential Ingredients: 1.1 lbs (500g) chicken thigh, 1/4 head of cabbage, 1/2 onion, 1 large green onion, 1 sweet potato, a handful of tteokbokki rice cakes
- Secret Rose Sauce Seasoning: 2 tablespoons gochujang (Korean chili paste), 2 tablespoons gochugaru (Korean chili flakes), 1.5 tablespoons soy sauce, 2 tablespoons oligosaccharide (or honey/syrup), 1 tablespoon minced garlic, 1 tablespoon curry powder, a pinch of black pepper
- Rose Base: 1 cup (200ml) heavy cream (or 3/4 cup milk + 2 slices of cheddar cheese)
- Optional Ingredients: 10 perilla leaves, mozzarella cheese, parsley flakes

Step 1. Prepping and Seasoning the Chicken
First, lightly rinse the chicken thighs under running water and pat them dry. Cut them into large, bite-sized pieces. Keep in mind they shrink as they cook, so don't cut them too small! Sprinkle 1 tablespoon of cooking wine (mirin) and some black pepper, then let them marinate for about 10 minutes to make the meat extra tender.

Step 2. Prepping Vegetables and Making the Sauce
While the chicken is marinating, let's prep the veggies. Chop the cabbage and onion into large chunks, and slice the sweet potato into thin sticks so they cook quickly. Diagonally slice the green onion. Next, mix all the sauce ingredients in a bowl to create the perfect ratio seasoning.

Step 3. Stir-frying Chicken and Vegetables
Lightly coat a pan with cooking oil and sautรฉ the seasoned chicken over medium heat. Once the chicken skin releases its oil and turns golden brown, add the firm sweet potatoes, rice cakes, and only about half of the prepared sauce. This step ensures the seasoning really soaks into the meat!

Step 4. Adding Veggies and Serious Cooking
When the chicken is about halfway cooked, toss in the cabbage, onion, and green onion, then pour in the rest of the sauce. You don't need to add water because the vegetables will release their own moisture. Cover the pan slightly and let it simmer over medium-low heat until the sweet potatoes are fully cooked. The delicious aroma will fill your entire home!

Step 5. The Core of Rose Sauce: Adding Cream
Once all the ingredients are cooked, itโs finally Rose time! Pour in your heavy cream (or the milk + cheese combo). The moment the red sauce and white cream blend into a beautiful orange "rose" hue is the most exciting part. Stir and simmer for another 2โ3 minutes until the sauce thickens to your liking.

Step 6. Finishing with Cheese and Perilla Toppings
Just before turning off the heat, sprinkle a generous amount of mozzarella cheese over the top and cover with a lid to let it melt with the residual heat. Finally, garnish with thinly sliced fragrant perilla leaves and a sprinkle of parsley flakes for a Rose Dakgalbi that looks as good as it tastes!

Rose Dakgalbi looks most appetizing when served directly in a cast iron skillet or a wide shallow pot. Since the thick, creamy sauce is the star, choose a dish that retains heat well.

Also, since there's plenty of sauce, don't forget to boil some pasta noodles to toss in at the end, or make the classic K-dessert: Fried Rice. The flavor was honestly "insane!" Itโs much smoother and more sophisticated than regular Dakgalbi, making it a perfect menu for home parties. Even kids who struggle with spicy food will likely love this thanks to the creamy rose sauce.
If you have leftovers, store them in an airtight container in the fridge. When reheating in the microwave the next day, add a tablespoon or two of milk to bring back that original creamy texture.
